Knead the dough on a floured surface for about 5 minutes until it's smooth and elastic.
Divide the dough into 8 equal portions and roll each portion into a ball.
Roll out each ball into a thin, round tortilla, about 8 inches in diameter.
Heat a dry skillet or griddle over medium-high heat.
Cook each tortilla for about 1-2 minutes on each side until they puff up slightly and have brown spots. Keep them warm in a clean kitchen towel or tortilla warmer.
For the Filling:
Spread a generous spoonful of refried beans onto each tortilla, leaving some space around the edges.
Add slices of avocado, diced tomatoes, chopped onion, crumbled queso fresco, and cooked sausage if using.
Drizzle with sour cream or crema.
Season with salt and pepper to taste.
If you like it spicy, add a few drops of hot sauce or salsa.
To Serve:
Fold the tortillas in half, covering the filling, to create a semi-circular shape.
Serve your baleadas warm, and you can also wrap them in foil or parchment paper for easy handling.
